Gather all leftovers. Chop up any ingredients so there are no pieces larger than 1/8"

Having a nice blend of sweet and savory ingredients helps this recipe.

Place a small sampling of all leftovers into a thawed empanada shell. Do not over or under stuff. Measurement will depend on size of empanada disc.

If frying, include cheese inside. If baking, sprinkle outside after egg wash.

Fold shell onto itself for a half circle and crimp edges. Obtaining a tight seal is most important for frying so oil does not seep into thankspanada.

Frying instructions: fry in canola oil at 375°F until shell is golden brown

Baking instructions: Brush thankspanadas with an egg wash and bake at 375°F for approximately 20 minutes or until done

Serve with gravy, cranberry sauce or any other sauces for dipping.

Notes

Freeze these, separated with parchment paper, in a gallon size zip-lock and store for a taste of Thanksgiving for months to come.
